Abstract
Protease was a type of protein hydrolyzing enzyme that has high economic value because of its application, namely protein hydrolyzate. There were several protease enzymes used to hydrolyze protein in marine fish, namely papain, bromelin and biduri proteases. The aim of this study was to determine the effect of the protease enzyme from several different sources such as the papain enzyme, bromelin enzyme and biduri protease enzymes as protein hydrolysis enzymes in marine fish.
This review literature research uses samples of several types of marine fish. The protein contained in fish was a dissolved protein which is very important in the hydrolyzate product.
The results showed that protease enzymes including papain, bromelin and biduri proteases could be used as protein hydrolyzing enzymes. The process of protein hydrolysis in marine fish with protease enzymes can increase protein levels along with increasing enzyme concentrations.
