Abstract
Used cooking oil is a cooking oil that has been used several times, and has great potential in endangering the health of the body. In order for these cooking oils to be recovered, processing is needed to improve the quality of cooking oil. One of them with added antioxidants found in Moringa Plant (Moringa oleifera). The purpose of this study to determine the effect of Moringa leaf extract on the quality of used cooking oil. Making Moringa leaf extract using maseration method with 96% alcohol. The parameters tested were acid number using alkalimetry method, peroxide number and iodine number using iodometri method.The results showed the mean of acid number of 1,7330 mg KOH / g, after addition of Moringa leaf extract decreased about 0.4059 mgKOH / g to 1.3671 mg KOH / g. Mean of peroxide number is 14,3445 mek O2/ kg, after addition of Moringa leaf extract decrease about 6,9758 mek O2 / kg become 7,3687 mek O2 / kg. The mean rate of iodine number is 13,1906 mg / g, after addition of Moringa leaf extract increased about 5,5578 mg / g to 18,7484 mg / g. levels of acid numbers and levels of peroxide numbers decreased while iodine levels increased. Based on statistical data processing of Paited Samples T Test using SPSS 15.0 program got significant difference <0,05 from level of each test.
