Abstract

Crackers are snacks that are very popular by the community and used as a complementary ingredient in staple foods. Crackers themselves are processed ingredients from flour that is usually added fish, onions, or other ingredients to enrich the taste. Crackers will taste more delicious if they have a crunchy texture. One way used for crackers to become crunchy is to add food additives. The material in question is borax. Borax, which is banned from food, aims to extend shelf life, inhibit bacterial growth, prevent rancid odors, crunchy textures and improve taste and color in food. This research aims to find out the presence or absence of borax content in the urine as the end result of borax metabolism in the body. This research method uses the Tumeric Test with Curcumin Paper. The results of this research in 20 respondents obtained 6 positive urine containing borax compounds and the resulting color is brownish redon curcumin paper. Therefore, further supervision of foods that are suspected to contain borax and more socialization to sellers and consumers to be more vigilant about food additives in the form of borax.
