Abstract

Legen is rich in vitamin B and vitamin C and can help restore lost body fluids after activities. Legen are easily damaged during the storage process. The legen drinks sold in Banyuglugur District are processed personally by local residents, so it is necessary to test food parameters. The mandatory parameter to determine the bacteriological quality of beverages is the Most Probable Number (MPN) test. The high contamination of beverages by coliform bacteria indicates a high risk of the presence of pathogenic bacteria that can cause health problems. The purpose of this study was to determine the bacteriological quality of legen drinks originating from 4 points of sale sold in Banyuglugur District, Situbondo Regency. The research variable is coliform bacteria in legen drinks sold in Banyuglugu District, Situbondo Regency. Sample examination was carried out at the Situbondo Regional Health Laboratory. The type of research used is descriptive research with qualitative analysis techniques. Sampling was carried out using a simple random sampling technique, namely random sampling of the total population. The results of the study conducted from 8 samples with 2 repetitions (16 examinations) found that 9 (56%) positive samples contained coliform bacteria, 2 (12.5%) of which exceeded the established coliform level and 7 (44%) negative tests. containing coliform bacteria, it can be concluded that there are legen drinks that exceed the limit for coliform MPN levels.
